Hey friends!!! It’s Wednesday…happy happy hump day! The weekend is in sight. Do you have any big plans? I really had my heart set on hiking Arkansas but there is a little rain in the forecast. Hopefully it changes or I will be one sad girl 😦
Anyway, in more food-like news, I have a wonderful recipie for you! Oh yeah, and if I havent yet told you, in our house we eat vegetarian. So if you love my recipies but would like to have meat with your meal, either add it in or put it on the side. But as always, having a few meatless nights (like meatless monday) is always a good idea!!!
This baked pasta is so delcious and oh so healthy! There is nothing I love more than eating pasta and not feeling a tad bit guilty about it. Like seriously…anything can be made healthy, it just takes a little creativity.
Adding the spinach in the dish gives it some much needed nutrients and is always a good way to sneak in those veggies for your non-veggie eaters. Haha 🙂 OMG I have the funniest story to tell you! So my dad is such a huge meat eater. Meat for every meal kinda guy! Well one day we went over there for dinner and I brought this dish and my dad literally ate about 3 helpings lol! I was so shocked. He said “this stuff is so dang good!” So moral of the story: if my total meat eater dad loves it, you will too 🙂
12 oz of pasta (I use ziti, but any pasta will work)
1 jar of light alfrado sauce
1 bag of spinnach- we absoulty love veggies and always load our meals full of them, so if you would like less spinach just use half of a bag!
1 15oz jar of part skim ricotta
1/4 c. of grated parmesan cheese
2 1/2 c. of mozzarella cheese (Sometimes I use cheddar cheese depending on what I have on hand. Either will work just fine!)
1/2 tsp. of Italian seasoning
Preheat oven to 425. Spray a 9×13 baking pan with a non stick cooking spray. Cook pasta according to instructions (until al dente). Drain and return to pot. In a medium size bowl, add about a cup of water and spinach, cook in microwave for about 5-6 mintues. When done strain the spinach and pat dry with a paper towl. You will want to get all the excess water out of the spinach. Next add the spinach, alfrada sauce, ricotta, and 2 cups of cheese to the pasta. Stir well. Add your pasta mixture to the baking dish and top with remainder 1/2 cup of cheese and parmsean and sprinkle with itailain seasiong. Cook for 15 mintues or until heated through.
***If you’re wanting to add some meat to this dish, either add in a little cooked chicken to the pasta dish or serve the chiken on the side!
Now, if your wondering if all we eat is green beans…HAHA our local grocery store (Aldis) has had green beans on sale for 79 cents for like the past 2 weeks, and so yeah for the last 2 weeks we have been living on green beans…well because I am a bargain shopper and eating fruits and veggies that are in season always taste better!
Funny story: last week my mom calls me…”hey green beans are on sale again! Want some?” Me: “OMG yes!!! That is the best news ever! I was like buy me all that they have” haha then the next week my husband was at the store with me and I see that sale sign again and it was like deja vu 🙂 so yeah…you know what happened. Six bags in and he’s like ummmm, hunny, that’s enough. HAHAHAHAHA ☺
So pretty much we have ate our fair share of green beans in the past few weeks, but it also happens to be one of my favorite vegetables so I am totally ok with that 😉
