Weekend Recap + A Delicious Recipe

Hey friends, happy hump day!!! How are you? How’s your week going? Did you have a good weekend? We sure did and it included the greatest amount of family time : ) I love those kinds of weekends!!!

I wanted to give you a little recap of our weekend- picture style! This should be fun. I had been meaning to write this post Monday and Tuesday but life was just so busy. Better late than never right? ๐Ÿ™‚

Our weekend started off with the Mutt March, it’s a 5k that supports dogs and helps them find forever homes!

It was a little chilly that morning but quickly warmed up. The race went through downtown Springfield and conveniently we live downtown. So we made a pit stop for water refills and bathroom breaks lol that was actually really handy!!! Mila really enjoyed it, I figured she would get tired half way through but nope she just kept going like she was one of the big dogs!!! We had so much fun supporting Mutt March and we will definitely be participating next year. I encourage you to do the same ๐Ÿ™‚

After Mutt March and Woofstock was over we grabbed some lunch loaded our bikes up and headed to the trail!!! We love bike riding so much! And completing 16 miles after a 5k, I was very proud of us!

After that we came home and relaxed in the hammock! That was very much needed ๐Ÿ™‚ A nap might have happened! Hahahaha ๐Ÿ™‚

Spending time with these two is my absolute favorite thing ever!!!

Now on to more food like news….

Who doesn’t love pizza? If you don’t…your crazy!!! I am pretty sure we could all down some pizza and what about a healthy pizza, made with fresh ingredients? Ok now we’re talking ๐Ÿ™‚ These english muffin pizza’s are whats for dinner tonight and I could be more thrilled about it!!!

Ingredients:

English muffins

Pizza sauce

Shredded mozzarella and cheddar (or use your favorite cheese)

Basil or italian seasoning – Optional

Pepperoni – Optional

Veggies – Optional

***Add whatever toppings you would like! I’m a cheese pizza kinda gal so thats how we make them. But feel free to put whatever you want on your pizza’s!

Directions:

Slice english muffins in half, place both sides on a cooking sheet. Broil these on both sides until crispy but keep a close eye on them because its really easy to burn them. Add your pizza sauce, cheese, and basil or italian seasoning (if using it) cook on 425 or until the cheese is melted. Add some parmesan on top and enjoy!!! These things are so easy to make and the flavor is through the roof ๐Ÿ™‚
