Happy Saturday + 2 Healthy Recipes

Hi Friends!!! How are you? I hope you are having a fantastic Saturday! We definitely are, the sun is shining, and its a gorgeous day! I think we are going to head to the park after I finish this post. Then tonight we are having dinner with an old friend of mine from high school…OMG, it has been like 8+ years since I have seen her! I am so excited!!! 🙂 We were the best of friends in high school and literally spent every waking moment together. She would spend hours upon hours straightening my ever so curly hair (now that’s a true friend, lol). Why didn’t we just leave it curly? Who knows!!!

Today’s post is dedicated all to her!!! A few days ago she had mentioned making a monthly meal plan to keep her family on track eating healthy and eating at home. Since we all know how expensive eating out can be, and she has two kiddos so it’s definitely expensive for them. She had asked if I had any favorite recipes…why yes, I sure do! We actually have a lot of favorites. So I put my thinking cap on and started brainstorming ideas for her family that the kids would enjoy as well. These two recipes are sure to please them. She is a vegetarian but her husband and her kiddos eat meat, so finding that balance can be tricky! These recipes are vegetarian but if you have some meat eaters in your family, just add some chicken or some other meat of choice and call it good 🙂 Oh and both of these recipes are Italian pasta dishes (because her and I have a serious love for Italian food). Our choice of dinner tonight is Olive Garden! LOL

Parmesan Garlic Noodles

Ingredients:

  • 1 tbsp olive oil
  • 3 tbsp butter
  • 16 oz of angle hair pasta
  • 1 cup of grated Parmesan cheese (the kind that comes in the can)
  • 3/4 cup of half and half
  • 3 cups of chicken broth (you could also use veggie broth if you want)
  • 2 tablespoons of minced garlic (I use the minced kind in the jar)
  • 2 tablespoons of crushed parsley

Directions:

Simmer your butter, oil, and garlic in a medium size sauce pan for few minutes until browned. Add in 3 cups of broth, let that come to a boil. Then add in your noodles and cook according to the package, you might need to add a little extra water if the broth cooks off. After the noodles are done add in the half and half, stir, then slowly add the Parmesan, stirring as you add it, then add the parsley. Mix it all together and your ready to eat.

This one is great when you have kiddos or if you are short on time because it literally comes together in less than 10 minutes. The trick is using angel hair pasta because it cooks so fast! This meal is soooo yummy! The pasta is super creamy and just all around delicious. It’s hard not to get seconds 🙂

 

Our next recipe requires a little time in the oven but preparing it takes only 5 minutes. This is perfect when you have kids around. After you put it in the oven, set a timer and go take care of other chores. It is super easy and also super delicious. This one is one of my husbands favorite meals EVER! He will literally request it every week 🙂

Ravio-sagne

Ingredients:

  • 2 cups of marinara sauce
  • 25 oz bag of frozen cheese ravioli (you can always use the meat version if you want)
  • 1 1/2 cups of mozzarella cheese
  • Italian seasoning to taste

Directions:

Preheat the oven to 400. Using an 11×7 glass baking dish layer the following ingredients.You will repeat this step twice. First start with a little bit of sauce (just enough to cover the bottom of the dish), then add one layer of ravioli, cover with sauce and cheese. Sprinkle with Italian seasoning. Then repeat the layering process: sauce, ravioli, and top with cheese! Cover this with aluminum foil and bake for 40 minutes. Remove foil and continue to cook uncovered for 10 minutes. Let stand for 10 minutes and it is ready to serve! As I said before it’s super easy to make just allow for the baking time!!!
